Drain and rinse the chickpeas thoroughly under cold running water. Pat them dry with a paper towel. If you prefer a slightly crispy texture, you can lightly pan-fry them in olive oil for 5 minutes.

Dice the cucumber into small even chunks, halve the cherry tomatoes, and finely slice the red onion. Place all in a large mixing bowl together with the chickpeas and olives.

In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to create a simple but flavourful Mediterranean dressing.

Pour the dressing over the chickpea and vegetable mixture. Toss well to coat everything evenly. Allow to marinate for 5 minutes so the flavours can meld together beautifully.

Divide the mixed greens between two bowls. Spoon the dressed chickpea mixture over the top. Crumble feta generously over each bowl and garnish with fresh parsley.
